Recommended Sharpening Angles & Technique for the Folded Pocket Knife Sharpener

Sharpening Angles:

  • Kitchen Knives: 15°–20° per side (Western-style), 10°–15° per side (Japanese-style)
  • Pocket & Hunting Knives: 20°–25° per side
  • Heavy-Duty Blades (Choppers, Machetes): 25°–30° per side

Sharpening Technique:

  1. Secure the Sharpener: Open the sharpener fully and place it on a stable surface or hold it securely in your hand.
  2. Start with the Coarse (400-Grit) Side: If your blade is dull, use the coarse side first.
  3. Angle the Blade: Hold your knife at the recommended sharpening angle, maintaining consistency throughout.
  4. Use Smooth, Controlled Strokes: Draw the blade across the sharpener from heel to tip, applying light, even pressure.
    • Push method: Move the blade away from you as if shaving off a thin layer.
    • Pull method: Draw the blade toward you while maintaining the same angle.
  5. Repeat: Stroke each side of the blade evenly (5–10 strokes per side) until you feel a burr forming on the opposite side.
  6. Switch to Fine (600-Grit) Side: Hone the edge with lighter strokes to refine and polish the blade.
  7. Final Touch: If available, strop the blade on leather or a smooth surface to remove any remaining burrs.

For best results, maintain a consistent angle and avoid excessive pressure. Regular touch-ups on the fine grit side will keep your knife sharp without excessive material removal.
